Veganomicon Cookbook Recipe Review #2
Sloppy Joes are one of those rituals of childhood – they’re messy, they’re kinda sweet, and they’re usually served up with fries or chips. I was elated to find this vegan version that is actually not “just as good as” but better than a joe made with ground beef.
1 c. uncooked lentils
4 c. water
1 T. olive oil
1 medium yellow onion
1 bell pepper, seeded and cut into small dice
2 cloves garlic, minced
3 T. chili powder
2 tsp. dried oregano
1 tsp. kosher salt
1 (8 oz.) can tomato sauce
1/4 c. tomato paste
3 T. maple syrup
1 T. yellow mustard
4-6 kaiser rolls or sesame buns
Pour the lentils and water into a small saucepan. Cover and bring to a boil. Once the mixture is boiling, lower the heat and simmer for about 30-40 minutes, until the lentils are soft. Drain and set aside.
About 10 minutes before the lentils are done, saute the onion, pepper and oil for about 7-8 minutes, until softened. Add the garlic and saute for another minute.
Stir in the cooked lentils, chili powder, oregano, and salt. Add the tomato sauce and tomato paste. Cook for about 10 minutes. Add the maple syrup to taste and the mustard, and heat through.
