About Me

My name is Claudia.  And I’m, well, I’m a flexitarian.  I eat mostly a plant based whole foods diet, but will eat meat maybe every other week if I’m having lunch with a client or dinner with friends.   My five year old son is a vegetarian by choice (see post “How Did I Get Here?”).  And my husband of almost thirteen years has not eaten meat or dairy for over 6 weeks now, with no signs of going back (see post “How Did I Get Here? Part Two”)  So I cook for my veg guys, because I love them and want them to be healthy and feel supported in their choices.  This blog is my journey of new ways of looking at food and it’s impact on the environment (for Elliot, veg guy #1) and it’s impact on our health (for Bryon, veg guy #2).

It has always been my goal that we would all eat the same thing – that we wouldn’t be one of those families that serve the kids one thing and then eat something else.  I know that’s a struggle for a lot of families, and am happy that Elliot is a good food explorer.  If it didn’t have a face at one time, he will try it.

Now it is my goal to make delicious vegetarian and vegan meals that we will all enjoy and to not spend hours in the kitchen every day doing so.  My day job is an interior designer  so cooking is just a hobby for me, but one that I really enjoy, especially when I get my veg guys in the kitchen with me and we all create something together.
